Casto Roldán was born in Cordoba and used to come to the Costa Brava in summer, around six months. But he soon decided to settle down in Sant Feliu de Guíxols where he met the woman to be his wife and with which nowadays he has two children. Casto decided he wanted to be Chef and started working in restaurants and hotels in the Gerona’s region. The fact that he started his professional career so young allowed him to gather an important experience along his life, working for the most recognised restaurants and hotels of the Costa Brava. In 1988 he joined the staff of Eldorado Petit as a second chef. From that moment, Casto Roldán has been a key person to the Eldorado development, developing a traditional, fresh and innovative Catalan cuisine and actively contributing to the prestige that nowadays has the Group Eldorado Mar.
